The Garbure is the iconic rustic soup from South West France with beans, potatoes, carrots, cabbage and turnips.
It may originate from the Gers, Béarn, Landes or Bigorre region…here, it is from the Basque Country with Bayonne Ham.
The Garbure : an outstanding selection
In 1983, Jean-Baptiste LOYATHO established his pigties in Gamarthe (Basque Country).
He built them in the heart of the Basque mountains, helped out by….80 friends!
He then settles as a breederand fattener. But it was without counting fate….An eye injury stopped him from working in dusty places. In 1995, with his wife, Maite CHARRITTON, they established their own delicatessen, “La Ferme Elizaldia” in order to transform and directly sell their pigs.
It is a unique case : specialised in cured salted meats, Jean-Baptiste LOYATHO and the Ferme ELIZALDIA have 3 PGI Bayonne ham approvals.
The Ferme ELIZALDIA has partnered with other pig farmers from the Basque Country in order to offer you a full range of meats.
