A delicious sweet and savoury recipe inspired by a Vietnamese speciality. For this veal caramel, the veal pieces are cooked in a cooking juice made from ginger, 4-spice mix, cinnamon and garlic.
We add a liquid caramel of our own making with soy sauce and let it simmer over low heat to concentrate the flavours and give the dish a candied structure. At the end of the cooking time, carrots and sweet potatoes are added to bring a touch of freshness. To be eaten without moderation!

The meat used in the composition of this supreme comes directly from a herd of about forty head of cattle where we are particularly attached to animal welfare. Here, the animals born on the farm are not dehorned. They spend a large part of the year in the wild, feeding on grass, fodder and organic cereals from the farm.
